Mulled Christmas tea
3 generous tablespoons
1 cup
Boiling water
1 cup
Dry gin
We use local Bundaberg Kalki Moon classic gin
2 cups
Sparkling water
¼ cup
Grenadine syrup
We recommend Monin Pomegranate — use ½ cup if you have a sweet tooth
To garnish
Strips of orange zest
Plenty

Instructions

01Measure Mulled Christmas tea leaves into a small teapot.

02Pour boiling water over the leaves and brew for 5–7 minutes.

03Decant into a jug over ice — or wait for it to cool down, but who has time for that.

04Add gin, pomegranate syrup, and sparkling water. Stir gently.

05Serve in fancy glasses over ice, garnished with orange zest.

06Enjoy Christmassy bliss.
Making just one?
After step two, decant your Mulled Christmas brew into a small storage jug and use as you go. For a single serve: pour 50ml of the brew into a fancy glass, add ¼ cup gin, 1 tbsp pomegranate syrup (more if you have a sweet tooth), top with sparkling water and a touch of orange zest. Ice, obviously.
PS. Yes, we had fun making this recipe — that's the royal "we", as it was a happy solo effort. Admittedly, it was a little early in the morning for that much gin, and if there are any typos in this blog, that's why.
