Pour boiling water over the leaves and brew for 5–7 minutes.

Decant into a jug over ice — or wait for it to cool down, but who has time for that.

Add gin, pomegranate syrup, and sparkling water. Stir gently.

Making just one?
After step two, decant your Mulled Christmas brew into a small storage jug and use as you go. For a single serve: pour 50ml of the brew into a fancy glass, add ¼ cup gin, 1 tbsp pomegranate syrup (more if you have a sweet tooth), top with sparkling water and a touch of orange zest. Ice, obviously.
PS. Yes, we had fun making this recipe — that's the royal "we", as it was a happy solo effort. Admittedly, it was a little early in the morning for that much gin, and if there are any typos in this blog, that's why.
