Step One
Make the Concentrate
40g
South Cloud Chai
½ cup loose leaf
1.2L
Water
6 cups, plus 1 extra cup for straining
120g
Honey
⅓ cup — adjust to taste

Multiply all quantities by four for 64 servings on hand. Far more cost-effective than commercial sticky chai concentrates — and your customers will taste the difference.

    Add South Cloud Chai to a medium saucepan.

    Pour in 1.2L of water and bring to the boil over high heat.

    Reduce heat and simmer gently with the lid off for 15 minutes.

    Remove from heat. Add honey and stir until fully dissolved.

    Strain through a tea strainer into a 1 litre bottle, adding the extra cup of water and pressing the spices firmly to extract every last drop.

    Refrigerate. Keeps for up to 7 days.

Step Two
Pull Your Chai Latte

    Combine concentrate and milk in a mug.

    Microwave for 90 seconds, or heat and froth on the stovetop.
